Piaya was consistently thin and crispy. Caution: Not really overly sweet. Really addictive. Strongly suggested when in Bacolod. They perform have got a branch in Makati for those who skipped their Bacolod branch.

For a long time my impression of the piaya was the Bongbongs variety - thick and soft. Bailon's will be (supposedly) the original the one that is definitely crispy and airy. I think it is a tad too lovely but I'm not just a huge enthusiast of piaya in the first place; iguess the thicker pastry of the bong's range balances the molasses. overall, though, it is a bacolod must-have, therefore do it now! yolo!
